Almond Roll



This cookie is crunchy and taste of the almond is so rich make this cookie so tasty.. and be a good companion for coffee

To make this you need :

  • 2 egg-white
  • 100 gram confectioners sugar
  • 75 gram margarine (melted)
  • 80 gram all purpose flour
  • 30 gram almond, roasted then finely ground

Direction :

  1. Using electric mixer beat the egg-whites until foaming and add confectioners sugar, beat until stiff.
  2. Add the flour and almond mixed well.
  3. Add melted margarine mixed well again.
  4. Pour 1 tablespoon of mixture on top of buttered parchment paper and use a spoon to make a thin circle with a diameter of 15 cm, then bake until slightly brown discoloration.
  5. Remove from oven and roll the cookie while still hot and let cool on cake rack.
  6. repeat the step 4 and 5 until all the batter gone.

Note : you can garnish the cookie with dip the tip of the cookie in the melted chocolate.

Gado-gado


What you need :

  • coarse shreds Asian lettuce or you can substitute with green lettuce
  • potatoes boiled until done and slice in inch wide
  • hard boiled eggs slice as you want
  • steam bean sprout
  • tomatoes slice as you want
  • fried tofu slice in inch wide (optional)

Peanut Sauce:


Directions

  • ground shallot,garlic,shrimp paste,thai chili to paste.
  • heat 1 tsb cooking oil in the pan then saute ground shallot etc until fragrance,turn the heat to low, add peanut butter let the peanut melted and add water, stir well.
  • add coconut milk,lemon grass and keffir lime stir well and bring to boil.
  • add salt n brown sugar and sweet soy sauce, taste it..if you like sweet taste you can add more brown sugar, add white vinegar (you can add more if you like more sour) remove from the stove and let it cool completely.

Serving :

arange asian lettuce/green lettuce,slice potatoes,tomatoes,bean sprout,tofu and eggs on the plate, pour the sauce on top.

Abon Sapi /beef meat floss

Directions

  • cut meat into big chunk, place to saucepan together with Indonesian bay leaf, galangal and pour the water enough to cover the beef. Bring to boil until the meat tender.
  • Removed the beef, let it drain and cool.
  • When it cooled slice it around half inch. With meat mallet pound lightly every slice of meat to break the muscle fibers, shred and break the fibers finely (if you break and shred it good it will appears look like cotton), repeat this step until all done, set aside.
  • Ground shallot,garlic,coriander and candle nut into a paste add coconut milk,salt and brown sugar (as needed..if you like sweet taste you can give more) and bring to boil add the shredded meat, stir well until all the mixture absorbed to the meat, keep stirring until the the meat little bit dry. Removed from the stove.
  • Place clean kitchen towel on the strainer.
  • Heat oil and fry the shredded beef until golden brown, drain on the strainer, and let it completely cool.
  • With the meat still in the kitchen towel, squeeze the towel to get rid of from the remaining oil.
  • Use fork shred the meat, now you have your meat floss ready.
  • Store in the container.

Chinese Steamed Buns with black beans filling



Ingredients :
  • 125 gram black beans
  • 60 gram granulated sugar
  • 50 cc water
  • 1/4 tsp salt
  • Pandan leaf ( you can find it from Asian store)
  • banana leaf/ aluminium foil/ wax paper cut it into square.
  • 1 package ready mix steamed buns flour (you can get it from Asian store) or you can also make it from scratch, like one of this link http://chinesefood.about.com/od/dimsumbuns/r/steamedbun.htm

Direction :

1. Preparing Black Beans filling :

  • wash black beans and soak until slightly bulging and soft.
  • Boiled the black beans until tender then drain with strainer.
  • mashed the black beans into a paste, set a side.
  • using a pan boil water, sugar and pandan leaves until sugar is dissolved then add the black bean paste and keep stirring until the black beans do not stick to the pan, remove from the stove and let it cool, ready for fill the buns.
2. Preparing the steamed buns.

  • To make a steamed buns dough follow the instruction on the steamed buns package or if you make it from scratch just follow the recipe.
  • Shape dough into balls. Roll each out into a circle. Put 1 tablespoonful of prepared black beans mixture in the center of each circle, and wrap dough around filling. Place seams down onto banana leaf/aluminium foil/pacrhment paper squares. Let stand until doubled, about 30 minutes.
  • Start the steamer ( I use electric steamer ) and let the water boiling and produce a lot of steam. Place as many buns on banana leaf/aluminium foil/parchment paper as will comfortably fit onto steamer leaving 1 to 2 inches between the buns. Steam buns over boiling water for 15 to 20 minutes.
  • after the steaming time done, REMOVE LID IMMEDIATELY so the water will not drip back onto buns surface.
  • Continue steaming batches of buns until all are cooked.


Puding Tape Ketan


Bahan :
  • Tape ketan Hijau
  • Agar-agar warna putih
  • Santan kelapa
  • Gula pasir


Cara Memasak :

  • campur santan, gula pasir dan agar-agar sesuai ukuran yg ada dalam kemasan agar-agar.
  • masak sampai mendidih.. jaga agar santan tdk pecah.. angkat.
  • Masukan tape ketan hijau.. aduk rata.. cetak dlm cetakan agar-agar (bisa juga menggunakan cetakan laen sesuai selera) dan biarkan sampai dingin dan mengeras..
  • Puding ketan hijau siap disantap..
