At first most of my friend in my neighborhood very skeptic about my Indonesian chicken satay, I told them my chicken satay is grilled chicken with peanut sauce, and this is what I always got : "what??? chicken in peanut sauce..? are you sure it will taste good? I never knew chicken with peanut sauce", heard that I just laugh and said I bet you will like it since your first bite, "bring it on" they said.. and then I cook my Indonesia's chicken satay and here whatt hey said.. "wow it's really good, I never thought chicken and peanut butter (I always used peanut butter to make the peanut sauce) will taste soo good".
It's a compliment for me when they like my Chicken Satay, so maybe one of you want to try it too, here the recipe,
To make Chicken satay, you will need :
- 1 lb Boneless chicken breast
- skewers (you can use either bamboo skewer or metal, but I use bamboo)
- 250 gram Peanut Butter ( some people use raw peanut then fry and ground to paste, but for the simple and easy I use peanut butter)
- 4 Shallots
- 4 Garlic cloves
- 4 candle nut (you can find in Asian grocery store, if you can't get it, you can skip it)
- 1/2 cup (125 ml ) Sweet soy sauce (you can find in Asian grocery store)
- Brown sugar (if needed)
- 1 tsp lime juice
- 1 1/4 cups (300 ml ) water
- salt (as needed)
- 4 tbs cooking oil (peanut oil much better)
Instructions
1. Prepare the sauce :
- ground shallots, garlic and candle nut to paste
- heat oil in a saucepan then saute the ground shallot,garlic and candle nut until fragrant
- add peanut butter, mix well until peanut butter melted then add water and mix well and slowly bring to boil (ALWAYS USE LOW HEAT so it will not make big splash) if too thick you can add water and bring back to boil.
- Add sweet soy sauce, salt (if you want little bit more sweet you can add brown sugar until the sweetness you like)
- set 5 minute in the stove then remove saucepan from the heat and let it cool to room temperature.
2. Prepare chicken :
- if you use bamboo skewers, soak it in the water for at least 30 minutes, so it will not burn when we grill the chicken.
- ground to paste 1 clove garlic
- cut chicken breast into cubes (1 inch)
- marinated chicken with garlic paste, lime juice and salt, set aside
3. Finishing :
- Prepare the grill ( I suggested to use outdoor grill)
- stick each chicken pieces into bamboo skewers until 2/3 or 3/4 full.
- do the same step above until all the chicken done.
- when the grill ready we can start to grill the chicken
- before grilling put 1 or 2 tbs. peanut sauce and bit sweet soy sauce on the flat/shallow plate and take 5 or 6 stick chickens and rolling on to the plate until all the chicken covered with peanut sauce then grill the chicken for 7 to 10 minutes, turning occasionally.
- do the same step for all the chickens.
Put the grilled chicken on the plate and pour the peanut sauce on top, u can serve with rice.
